The Butchery Block
The Butchery Block was founded in 2018 by Shane Wolbaum. The idea to start the business was spurred on by rave reviews from family and friends who had sampled a homemade batch of sausage that Shane made from recipes and handcrafted meats passed down for three generations. With a recipe in hand and ambition afoot Shane leased a building in Cochrane, Alberta and began to produce sausage with a hand-crank grinder and stuffer. Shane pursued this path and completed the Butchery and Charcuterie course at SAIT in 2019. The rest, as they say, is history.
